The grapes to make this wine, are provided by very old stumps of the Parellada variety. Vines of more than 60 years, located in our property of the Baltana Vella, 480 meters high. These vines planted in terrain with a slight slope and with a very extreme ecological agriculture, produce grapes with a high concentration of aromas, and with ahigh alcohol content to be Parellada. For several years, these parcels have notbeen cultivated, to avoid an excess of production and give balance to thestump. With a goodgreen and short pruning, we make the grapes reach a perfect ripening point. Grapes harvested by hand, chosen on the same farm, and in small trailers aretransported at 2km distance to the winery.
Handpicked, without being skidded, the grapes are put into the pneumatic press with lowpressure. Temperature-controlled fermentation with selected yeasts. 2 month grow in stainless barrels and slight filtration before bottling.
Elegant andagile in the glass with grayish tones that denotes its youth. When smellingit, first appears citrus notes together with white fruits, almond flowers andlot of freshness which makes no doubts about its mountains origins. On the mouth,there is a good balance. The acidity awakens the freshness of this mountain wine. After 5minutes in the glass, the aromas silkiness enhances the wine elegance.
